The 4th India International Hotel Travel and Tourism Research Conference
(IIHTTRC) 12 – 15 February, 2014

Banarsidas Chandiwala Institute of Hotel Management & Catering Technology, New Delhi, inaugurated the 4th India International Hotel Travel and Tourism Research Conference (IIHTTRC) on February 12, 2014 with the objective to bring Industry Managers, Tourism and Hospitality Researchers together to deliberate on the issues related to the travel, tourism and hospitality business.
The Honorable Guest at the inaugural ceremony, Mr. Gour Kanjilal, Executive Director at Indian Association of Tour Operators, India, gave his insights on “A Tourism Concern: How to move forward in this competitive age”. He mentioned that travelers are becoming more environment friendly and would like to visit those destinations which are adopting global eco sensitive practices. They are shifting from 5 star luxury concept to more price sensitive, clean and affordable holiday concept with accommodation which matches the local surroundings, provide local experiences, and relate to food, culture as well as local employment. The tourists are looking into emerging markets like India, China and Brazil for which the Government of India needs to partner with the private operators in Tourism Sector. There is a need for new marketing strategy to emphasize on “Experiential Tourism” products through the removal of bottlenecks such as high taxation, regimental visa policy and civic governance. In the twelfth five year plan (2012 – 17) of the Government of India, there is a special focus on Tourism due to its economic value as also for job creation, poverty eradication and women empowerment.
Mr. R. K. Bhandari, President IIHTTRC and Principal BCIHMCT, welcomed the dignitaries and thanked all the participants for attending the conference. He asserted that due to the changing needs of travelers, increase in competition, and change in macro environment & technology, there is a potential for research in the field of tourism and hospitality and considers this as a platform to strengthen the hospitality and tourism teaching learning process. Mr. Bhandari announced the dates for IIHTTRC, 2015 to be February 11 – 14.
In the key note address Dr. Therdchai (Ted) Choibamroong, Foundation Dean and Director, Centre of Integrated Tourism Management Studies, National School of Development Administration, Bangkok, Thailand, highlighted the need for “Creativity” in tourism products. He revealed the iceberg model of tourism and said, “There is a need to pay attention to the supply side consisting of tour operators, people, service, spa, restaurants, safety, natural resources, transportation and hotels, that remains under the water; Development and management of tourism being the tip of the iceberg”. He stressed on the fact that there is a call for improving the quality of products on the supply side for sustenance though the industry is running after increasing the number of tourist receipts. Predicting the future, Dr. Ted presented the components of tourism in the form of 5 E (entertainment, excitement, education, expertise and experience) and 5 S (security, safety, service, sanitation and satisfaction).
Dr. Maharaj Vijay Reddy, School of Tourism, Bournemouth University, UK gave a key note speech on Green Economy: Opportunities and Challenges for Tourism and Hospitality. He gave his insights on, “Transition to Green Economy: Opportunities and Challenges for Tourism and Hospitality”. Transition in sustainable development, Challenges and Targets due to climate change, Tourism Opportunities, emerging issues and challenges for tourism in Green Economy, Adaptation and Mitigation as well as capacity building and awareness raising were the topics discussed by Dr. Reddy. He further explained the “Bio-regional” approach of tourism as a challenge, which stands for creating stronger linkages with local economy and embedding within local natural and cultural heritage.
A vote of thanks was given by Mr. Bhupesh Kumar, Convener IIHTTRC 2014 at the end.
Online social network and use of social media has increased opportunities and potential for achievements in all areas of hospitality, travel and tourism industry. It has changed the face of Tourism & Hospitality Sector providing information to the traveler. These ideas were highlighted through the 1st technical session of the day “Marketing Management in Tourism and Hotel Operations,” chaired by Dr. Kumar Ashutosh. The papers presented in this track were - The use of social media in the promotion of leisure destination – A Case Study on Ramoji Film City (Hyderabad); Promotion of tourism in Himachal Pradesh through Culture - A Study of Shimla Summer Festival; Gastronomy Tourism and Destination Image Formation; The success story of Gujarat Tourism and Hotel Web-Sites Exhibits Effective Sales and Marketing Techniques for Branding and Positioning of the Hotel Product.
Environment is necessary for sustenance of Tourism. Tourism will never be completely sustainable as every industry has impacts, but it can work towards becoming more sustainable. As more regions and countries develop their tourism industry, it produces significant impacts on natural resources, consumption patterns, pollution and social systems. The need for sustainable/responsible planning and management is imperative for the industry to survive as a whole. The 2nd track “Sustaining Environment in Tourism” brought forth these valuable discussions through papers namely - Emerging Trends and Developments in Indian Tourism and Hospitality Industry; Impact of Tourism in Kumaon – A Case Study of Development of Tourism Avenues in the Kumaon Region; Entrepreneurial Developments in Tourism and Hospitality Industry – Indian Perspectives; Tiger, Tourism, Animal Ethics and Conservation – A Needed Co-existence; Emerging Trends in Tourism, Travel and Hospitality Sector. The session was chaired by Dr. Nimit Chowdhary.
The parallel session on “Destination Development and Promotion in Tourism” chaired by Dr. Therdchai (Ted) Choibamroong gave insights to destination development and promotion of tourism. Managing destination development is fundamental to successful ‘Implementation’ of tourism management; where destination managers and stakeholders put into action the priority strategies and plans developed during the ‘Destination Planning’ process. Marketing of New Tourism Destinations and Service in Himachal Pradesh – Analysis of Various Efforts by Himachal Pradesh Tourism Department; Promotion of Pilgrims Tourism in Bhandara District; World Expo 2020 – Heralding Dubai’s Super Growth – A Road Ahead; Pilgrimage Motivation and Travel Destination Choice – A Relationship Framework; Analyzing Heritage Tourism Potentials of Himachal Pradesh. These papers provided some effective measures that can assure motivation to travelers and reassure value for money by making their trip a memorable one. Culture and ethnicity need to be preserved along with promotion of tourism product and services.
The second day started with the keynote speech by Dr. Asad Mohsin, Director – Institute for Business Research, University of Waikato Management School, Hamilton, New Zealand, who spoke on Cross Cultural Sensitivities in Hospitality: Potentials for Conflicts and Understanding”. The thought provoking questions raised by him during the presentation were “Are multiculturalism, multinational, globalization disheartening words, or are they enriching? Are we losing our cultural values or enriching them? What is the role of diversity in the contemporary world of hospitality?” Explaining the importance of Professionalism in the Industry Dr. Mohsin quoted, “Never allow one simple issue to take away the big picture of your life”. He urged the hotel managers to utilize cultural analysis and insights while dealing with guests of other nationalities.
Talking about “Emerging Global trends in Tourism: An India Perspective” Dr. Sandeep Kulshreshtha, Nodal Officer and Chairman – Academics, Indian Institute of Tourism and Travel Management, Gwalior, M.P., India,  pointed out the growth of special interest tourism in India through theme park visits, adventure tourism, casinos and activity based tourism. He further added that today’s travelers seek for shorter length of stay and careful spending. With increase in life expectancy, older people are also an upcoming target market for tourism sector.
Tourism marketing is the application of principles and techniques of marketing to the general field of tourism. Marketing tourism “products” is different from most other products because what is being sold is the consumption of an experience rather than a tangible product. Tourism product means the combination of products and particularly services, which make up the total experience. With such opinions aired in the 1st session “Marketing Issues in Tourism Products & Services”, chaired by Dr. Manohar Sajnani, the various paper presentations included - The Impact of cultural attractions and amenities in building image of a tourist destination – A study of tourists visiting Jaipur; Product Development, positioning, branding and Management – Case Study of Himachal Pradesh; Art of Marketing Handicrafts – A Case Study of Andhra Pradesh; Time Share Vacation Holidays and Marketing Difficulties; Green Marketing and its effect on the Destination Image – A Conceptual Analysis; Perception of Houseboat Owners on Houseboat Industry in Kashmir – An Empirical Study.  
The parallel track chaired by Mr R.K.Bhandari, onIssues in Tourism discussed contemporary issues in tourism highlighting Geo Tourism, Community Participation, Cinema Tourism, GDP and Tourism and Niche Tourism. Research papers presented were - Scope of Geotourism in Himachal Pradesh & Increasing Consciousness with Regards to Geo-Heritage and Geo-Conservation; Community Participation in Tourism Development and Livelihood Sustainability; Cinema Tourism - The Emerging Trend in Genre of Innovations in Tourism Industry;  Causal Links between GDP and Tourism – A Comparative Study of India and Pakistan; Niche Tourism – Contribution of Festivals and Events to Destination Development in Tamil Nadu; Tourism – A Catalyst to Economic Dimension.
The quality of service in hotel industry is an important factor of successful business. The existing trend of complete quality management in hotel industry ensures the achievement of competitive advantage of hotel companies and is therefore the subject of contemporary research into service quality in hotel industry.  Hospitality Service Quality and Customer Delight – New Directions and New Challenges; A Comparative Study on Revenue Management between Four and Five Star Hotels of Delhi – NCR; Quality Management Systems in the Hospitality Industry; Ethicurean - A Study on Ethical Food Trend, Opportunities and Risks; Emerging Healthy Food Options Offered By The Hotel Industry; The Adoption of Eco-friendly Practices in Restaurants of Eastern India – Antecedents and Accolades were the research presented during the 2nd technical session on “Hotel Operations and Food Service Management” chaired by Dr. Asad Mohsin.

As service is people oriented, management of a true hospitality profession is crucial for proficient management of the operations in the organizations. The 3rd  track on “Human Resource Management: Issues & Challenges”, chaired by Dr. Sonia Sharma, had papers emphasizing on topics such as Strategic Training and Development Programme – A Step towards Motivating and Retaining Middle Management Staff of Hotel Industry - A Case Study on Five Star Hotels of Delhi; E-Learning: An Emerging Trend to Strengthen Hospitality and Tourism Teaching-Learning Process; Socio-demographic profile of the hospitality supervisor in a changed South Africa labor force.
The third day of the conference started with a Keynote Speech by Dr. Swarup Sinha, Principal, ITC Hospitality Management Institute, Gurgaon, who stressed on “Service Quality and Hospitality Education”, in an effort to mitigate the gap between the two.  Emphasizing the importance of contemporary knowledge, he commented that “Creativity is as important as Literacy”. Speaking on Service Quality Mr. Sinha said, “Good is the enemy of Great and building a Service Excellence Culture must be prioritized”. Advocating the hospitality Institutes and the Industry about their future, he urged to “Challenge the crisis” and explained that “Whenever there is danger, there is an opportunity”.
A Panel Discussion on Building Stronger Links between Education and Industry was conducted comprising of academia, industry stakeholders and industry professionals on the third day of the conference. The session was moderated by Dr. Asad Mohsin. The panel comprised of Mr. Kunal Sood, Human Resource and Talent Development Manager, Crowne Plaza New Delhi Okhla, Dr. Swarup Sinha, Principal, ITC Hospitality Management Institute, Gurgaon, Mr. Deepak Behl, Director - Human Resources, The Grand, New Delhi, Mr. Ashok K. Agrawal, Professor, School of Hospitality Management, G.D. Goenka University, Gurgaon, Mr. Douglas Peter, Advisor Human Resources and Training at KUE Advisors, India, Ms. Jacqueline D’Almeida, Training Manager, Shangri-La Hotel, New Delhi and Mr. R. K. Bhandari, President IIHTTRC and Principal, BCIHMCT to deliberate on the expectations of students, academicians and industry stakeholders.

After the interactive session, following recommendations were framed:-
1.     Strengthen Recruitment: Faculty and Staff
2.     Nominate the industry people in the Institute’s Advisory Board.
3.     Revision of the curriculum as per Industry needs, to reduce the gap between industry’s demands and institute’s delivery.
4.     Institutes must develop a graduate profile to facilitate Industry.
5.     Institutes are required to have a Quality Assurance process that is credible.
6.     Research on real life issues of business: Faculty must involve in active research in order to teach beyond curriculum whereas the Industry should involve in the researches by providing timely information.
7.     Education needs to have innovation and a strategic focus in order to fulfill the needs of the future.       
8.     Provide continuous Industry Exposure to the faculty.
9.     Necessary tie-ups between Industry and Institutes, that give value, must be initiated.
10.                        Increase in number of Guest Lectures from the Industry Professionals would intensify knowledge and experience sharing.                                                                                                                                                                      
11.                        Institutes ought to be good pay-masters so as to attract quality educators.
12.                        Industry needs to have a 360 degree feedback in order to get insights from a trainee’s perspective.  
The conference concluded with the presentation of the conference report and vote of thanks by Mr. R. K. Bhandari, Principal, BCIHMCT & President IIHTTRC 2014, highlighting the salient features of the three days conference. He emphasized that the Conference would have enlightened the participants and stake holders to get an insight into the challenges and opportunities lying ahead due to the rapid changing technology, practices and trends in the hospitality and tourism sector.
                                                                                                                                                                                                                                                                                                                  He thanked all the Researchers and Presenters for their excellent cooperation and contribution to the Tourism and Hospitality field. Expressing his gratitude towards all those who participated in the Conference, he appreciated the contribution of the Banarsidas Chandiwala Sewa Smarak Trust Society Group for providing all the necessary support in the organization of the conference.
A cultural trip to Suraj Kund International Crafts Mela at Faridabad was organized, for the delegates on the third day of the conference where the unique diversity of Indian Traditions and Culture represented the ethos of rural India. It showcased some of the most exquisite handlooms and handicrafts of India.

On the last day of the conference, the delegates enjoyed a trip to Agra, the city which gives access to Three World Heritage Sites – Taj Mahal, Agra Fort and Fatehpur Sikri.

4th India International Hotel Travel and Tourism Research Conference (IIHTTRC) 12 – 15 February, 2014

BCIHMCT is all set to host 4th  India International Hotel Travel and Tourism Research Conference (IIHTTRC) from February 12 to 15, 2014.  The IIHTTRC series has established itself as the most prominent International Research Conference in the field of Hotel, Travel and Tourism. The conference shall cover the related fields of the respective industries through application of theory and practices with perspective of education, business, industry, services, humanity, environment and government. Workshops and other industry related forums, along with formal presentations have been scheduled for this four day event.

BCIHMCT being the proud education partner, to the  Master Chef Competitions for the 10th Annual Chef Awards 2013 being  organized by Indian Culinary Forum from 16th to 19th October, 2013. Golden Hat Award, Silver Hat Award, Lady Chef of the Year Award, Master Chef International Cuisine Award, Master Chef Oriental Cuisine Award, Kitchen Artist Award, Master Chef North Indian Cuisine Award, Master Chef Indian Sweets Award, Master Chef International Confectionary Award, Master Chef Kebab Award, Master Chef Baker Award, Master Chef South India Cuisine Award and Chef of the Year Award were the categories of competitions held between the ICF members from the Industry. Student Chef of the Year Award has been introduced this year for students of Hotel Management Colleges. The jury consisted of Chef V.S. Datta, Chairman Jury, Chef Y.B. Mathur, Chef Bakshish Dean, Chef Rajiv Malhotra, Chef Siresh Saxena, Chef Rajiv Chowdhary, Chef Tarun Dacha, Chef Theodore Rudiferia, Chef Mahesh Sharma, Chef Ravitej, Chef Manisha Bhasin, Chef Kushal Arora, Chef Ajay Sood, Chef Suman Sharma, Chef J. Uppal, Chef Zacharia, Chef Nimish Bhatia, Chef Rajesh Variath and Chef Sushil Chug. The results of these competitions would be announced on 23rd November, 2013 on the occasion of International Chefs’ Day at Hotel Ashoka, New Delhi.

~ Chandiwala Hospitality Ensemble - Key to Success for Aspiring Hoteliers~


New Delhi, 2013: “Dedication with a combination of Hard & Smart Work” is the mantra for success. At the Award Ceremony of the 12th Chandiwala Hospitality Ensemble on September 27, 2013, Chief Guest Mr. Rajan Bahadur - Chief Operating Officer, The Grand New Delhi in his witty and relatable speech, recounted to his audience two very important things his life & profession has taught him - i) importance of dignity of labor & ii) importance of becoming a balanced professional to be able to achieve success. Using anecdotes from his own life, Mr. Bahadur educated the students the value of hard work, ethics, work-life balance & time management. He thanked the entire management of Banarasidas Chandiwala Institute of Hotel Management & Catering Technology for introducing him to one of the brightest set of budding minds - the business leaders of tomorrow. He wished the students be blessed with instinct & intelligence to always make the right choice at the appropriate time, seize every opportunity and achieve all that can be theirs! He was able to connect with the student community & faculty present. 
With an objective to provide an appropriate forum to the budding hoteliers to be able to display their potential and also have an opportunity to refine & enrich the same, Chandiwala Hospitality Ensemble (CHE) took place from 25th September, Wednesday 2013 to 27th September, Friday 2013 said to be the country’s most prestigious National Competition, dedicated to the promotion of Hospitality Education. Competitions concerning Culinary Art, Bartendering, Flower Decoration, Hospitality Brain Twister and Hotel Design Specific Facility Planning proposed an arena for hospitality aspirants to get accredited by a panel of internationally acclaimed industry representatives.
Inaugurated on September 25, 2013, the Chief Guest for the Ceremony, Mr. Gopal Rao, Regional Vice President, Sales & Marketing, Inter Continental Hotel Group, South West Asia and Guest of Honour, Mr. Jag Pravesh Chand Gupta, Training Manager, Hyatt Regency, New Delhi declared the event open. The other dignitaries present at the gracious occasion were Mr. Rishi Nath Bhagirath, Human Resource Executive, Taj Palace Hotel, Mr. B.N. At Banarsidas Chandiwala Institute of Hotel Management and Catering Technology

On 31st August 2013, a group of BCIHMCT alumni working in the hospitality sector gathered at the campus to share their experiences with the current students. Mr. Tusher Taneja (Business Development Chef – Costa Coffee), Ms. Kriti Wasan (Avanta Business Centre), Mr. Ahmed Faisal (Restaurant Manager, Eros managed by Hilton), Mr. Sumit Gulati (HR Executive in an MNC), Mr. Prateek Wadhwa (Sales and Marketing, Taj Hotels and Resorts) and Mr. Abhinav Singhai (Pursuing PGDM-Tourism, IITTM, Noida) facilitated the interaction.
Such an interaction holds a great importance to the College experience as students see their possible future through alumni, and alumni remember their pasts and what they experienced as students.
The formal session started with the welcome note of our Honorable Principal Mr. R.K.Bhandari.  He emphasized on the importance of enjoying the college life and using it as a platform to reach greater heights in the professional life.
The students heard about the significance of learning at the Institute in former students’ lives and enlightened the gathering, how the outlook has changed and still stayed the same during these years. It was a great opportunity for intergenerational interaction and was just an example of many such opportunities at the College each year.
While discussing on how to prepare oneself to meet the expectations of the industry, the alumni members advised the current batch students to perform responsibly and work with dedication during their Industrial Exposure, in order to develop better industry networks.  They also recommended the students to upgrade their knowledge by going for further education at specific institutes with relevance to their area of interest such as Le Cordon Bleu, London for Culinary Arts and others.
As alumni, the former students played an important role as mentors, advisers and inspirations for our current students. In the talented and accomplished alumni of BCIHMCT, the budding hospitality professionals saw the exciting opportunities that the institute can provide and realized the strong positive relationship shared by the two.

12th Chandiwala Hospitality Ensemble 2013


The Annual Hospitality Event - Chandiwala Hospitality Ensemble will take place this year on September 25, 26 and 27, 2013.  This event encourages future professionals of the Hospitality Industry from all over the country & beyond to exhibit their creativity, innovation and talent, which is required in the Industry during the various competitions.
The aim of this Mega Event of Hospitality Education Sector is to provide an appropriate platform to the budding Hospitality Executives, not only to display their skills but also to have an opportunity to refine and enrich the same. Learning through sharing is best at this ensemble. 
The popularity of this event is evident from the increasing number of the steams’ participation every year in the various events highlighting the Professional Skills in the fields of Culinary Art, Bar Tending, Flower Decoration, Hospitality Brain Twister and Hotel Design Specific Facility Planning.
This Ensemble is one of the best examples of Active Industry- Institution interaction and the largest platform for the students to have a closer integration and interaction with the Hospitality Education Sector and its stakeholders, also giving an opportunity for the young aspiring hoteliers display their talents at the National level in the presence of the Best Talent. The various Hotels in the NCR of Delhi have always been supporting this event by nominating their Executives to judge the various competitions.
Last year the ensemble was inaugurated by Chef Davinder Kumar, President, Indian Culinary Forum and Vice President (F & B Prod.) Le Méridien, New Delhi
as the Chief Guest for the Opening Ceremony.

Banarsidas Chandiwala Institute of Hotel management and Catering Technology hosted Dabur Hommade HomeStar contest on May 3, 2013, judged by Master Chef Vikas Khanna’s, seen as one of judges on Star Plus’ Master Chef India.
According to Chef Vikas Khanna, all those women and men who painstakingly cook scrumptious dishes for their family are to be given a grand salute. He added that a contest like this was indeed a great initiative by the brand to give an opportunity to the queens and kings of Indian kitchens to bring their culinary skills outside their homes and share it with the world.
The contest saw more than 5,000 entries, of which 10 reached grand finale. Sudha Dhir, a 65-year-old homemaker from Gurgaon won the contest.

Annual Day 2013 Celebrations



March 15, 2013 marked the celebration of 14th Annual Day of BCIHMCT to felicitate the winners of various extracurricular and academic activities organized at the Institute throughout the year.

The judgment of food stalls, put up by the students of the Institute, by Chef. Sabyasachi Gorai, Director of Kitchens, Olive Bar & Kitchen, Delhi and Chef. Farhan Ahmad, Sous Chef, Hilton Eros Nehru Place, set the pace for the day. These food stalls catered to a huge influx of guests throughout the day up to late evening hours.

Inter College Folk Dance Competition being an annual feature of the College events, revived the cultural heritage, being the next attraction of the day. Seven teams from various Colleges of Delhi-NCR gave breath-taking performances bringing together the traditional dance forms from various parts of India.

The Chief Guest at the function, Mr. Ramesh Takulia, Director, Learning & Development (Taj Hotels Luxury Division) Taj Hotels, Resorts & Palaces, in his speech said that the college had carved a niche for itself in the hotel industry producing highly professional graduates. He also gave the students tips for success in Hospitality Industry.


Concluding the celebrations of the Annual Day, the students of the Institute added color to the evening by cultural performances. Valedictory Function for awarding trophies and certificates to the winning participants in the events, held throughout the academic year, was the highlight of the evening.

Session on Performance Index by Mr Barun Jolly, General Manager, Crowne Plaza Today, Okhla New Delhi



A guest lecture was conducted on “Performance Index” for the final year students by Mr. Barun Jolly, Genral Manager, Crowne Plaza Today Okhla, New Delhi on 13th February 2013. Students were briefed about the role of various tools and the approaches being followed by the industry to keep check on the hotel performance thus helping in decision making. Various indexes  for different operational department with respect to the current trends were explained. Students found the lecture very informative and interacted with Mr Barun Jolly by answering his questions and putting up queries. The session lasted for about and an hour and a half. Mr. Barun Jolly was given a vote of thanks by Mr R.K.Bhandari, Principal. He appreciated Mr Jolly’s initiative and efforts to help institution and students. He said it was indeed one of the most interesting  and important guest lecture so far where by students have learnt to be an effective manager through right measurement of the performances and that BCIHMCT would look forward to learning more from him in future.

EATING WITH YOUR FIVE SENSES

“EUROPEAN QUALITY FOOD:
” Aimed to increase European Gastronomy Awareness through the Five Senses, a session of European Cuisine Masterclass was organized by European Union, the Ministry of Agriculture, Food and Environment of Spain and the Spanish Food and Beverage Industry Federation (FIAB) on 7th February 2013 at Banarsidas Chandiwala Institute of Hotel Management and Catering Technology, New Delhi. Mediterranean Diet being a lifestyle for today was introduced through the session comprising of live cooking and tasting for students, theoretical explanation of the basic recipes and its ingredients, cooking the recipes related to the 5 senses. A Masterclass Technical Session by Chef Guillermo Torino, Chef Julian Arranz and Chef Jesus Serrano was conducted for the budding hospitality professionals focusing on accurate explanations of ingredients and basic flavors, signature European Cuisine and popular recipes for the 5 senses.

Report on India International Hotel, Travel & Tourism Research Conference 2013

The India International Hotel, Travel & Tourism Research Conference was held at Banarsidas Chandiwala Institute of Hotel Management and Catering Technology, New Delhi, India, from January 29 – 30, 2013. The fifth sequel to these conferences initiated in the year 2009, was attended by delegates from various countries. This conference brought industry managers, tourism and hospitality researchers along with representatives from media together to deliberate on the issues related to the travel and hospitality business ensuring that the Industry adapts the innovations discussed at this forum. Inaugural Session The Inauguration of the Conference was held on January 29, 2013 bringing industry managers, tourism and hospitality researchers together to deliberate on the issues related to the travel and hospitality business ensuring that the Industry adapts the innovations discussed at this forum. Mr R. K. Bhandari, President IIHTTRC and Principal BCIHMCT, welcomed the dignitaries and thanked all the participants for attending the conference. He announced the dates for IIHTTRC, 2014 to be 12, 13 and 14 February highlighting “Hotel and Tourism Marketing” as the theme for the conference. Mr. D. K. Beri, Senior Vice President (Business & Corporate Affairs), Indian Hotels Co. Limited, Taj Group of Hotels, the Chief Guest, along with Guest of Honour, Mr. Tushar Pandey, President and Country Head, Strategic Initiatives & Government Advisory, YES BANK Ltd. and other dignitaries inaugurated the conference by lighting the lamp and released the “Indian Journal of Applied Hospitality and Tourism Research” Vol.5, (ISSN 0975-4954). Mr. Tushar Pandey spoke on “Adding ‘Inclusive’ to ‘Incredible India’: Harnessing Tourism’s Potential as a Socio Economic Enabler” emphasizing on the fact that Tourism holds the largest potential for employment, after Agriculture. Mr. D. K. Beri encouraged the students and faculty members to be a part of Industry exposure at certain intervals and be aware of the new trends. Giving a word of caution to the hotel management colleges, he quoted, “Do not sell education, impart it to be on top”. Mr. Gour Kanjilal, Executive Director, Indian Association of Tour Operator (IATO) gave a keynote speech on “Tourism Presentation on Convention and Meeting Sector, It’s Operation and Research.” He suggested MICE segment to be proficiently used to combat the off-seasonality, making India all round Tourism Destination. Professor J.S. Perry Hobson, Pro Vice-Chancellor for the Division of Hospitality, Tourism and Culinary Art at Taylor’s University (Malaysia), the Editor-in-Chief of the Journal of Vacation Marketing and member of the Board of Directors of International Centre of Excellence in Tourism & Hospitality Education (THE-ICE) was the first Key Speaker deliberating on “Developing Innovative Products and Services for tomorrow’s Guests.” He felt a need for Industry Education partnership to strengthen and elaborated upon the growing debate about dwindling innovation. A vote of thanks was given by Mr. Bhupesh Kumar, Convener IIHTTRC 2013 at the end. Paper Presentation Track 1: Meetings, Incentives, Conferences and Exhibitions (Day 1) Chairperson: Dr. Vinnie Jauhari, Director of IIMT, Gurgaon Mr. Bipin Chandra Pant and Dr. Amit Gangotia presented their paper on MICE Tourism in India: Trends, Opportunities and Challenges, suggested the top down development of convention infrastructure in a phased manner dividing cities in clusters and replication of the North American/ European model by investing in building Convention infrastructure. Mr. Paresh Bali, Mr. Ajeet Kumar Singh and Mr. Manish Kumar Sharma presented Empirical Study to find out Trend, Opportunities and Challenges for MICE Tourism in India, revealing the major concern to be the requirement of skilled manpower, lack of appropriate infrastructure facility, effective transportation system, higher airfares and lack of integration between the allied tourist industries. Mrs. Rekha Maitra and Mrs. Anuroopa Mahajan’s paper on “Hosting Meeting & Exhibition - A Source of Revenue Generation for Hotel Industry” suggested that providing best available rates by hotels and competitive prices by the Airline Industry would encourage the growth in MICE business in India along with modern technology that is preferred by customers. Paper Presentation Track 2: Sustaining Environment in Tourism (Day 1) Chairperson: Dr. Kumar Ashutosh, Head, Dept of Tourism, CVS, University of Delhi Ashwani Kachroo and Vinod Kumar’s paper on Sustainable Tourism Development and Environmental Law-Its Issues and Challenges, revealed the role of Ministry of Environment & Forests in the respect of sustainable tourism in India. Sustainable community based heritage tourism at Bishnupur, West Bengal: an investigation of local residents’ attitude presented by Pralay Ganguly and Kalpataru Roy, emphasized how the current increase of interest in the heritage tourism has led to an increase in the number of tourists visiting heritage destinations and attractions all over the world. Dr. Maharaj Vijay Reddy and Parmesh D Saini‘s presentation on “Space Tourism prospects and perspectives of potential consumers in India” disclosed that the space programs of China and India are developing rapidly as like their economy, which in turn has resulted strong source markets for the space tourism industry too. Dr. Rinku Sanjeev and Shikha Misra‘s presented a paper on Behavioral Training: A key to Sustainable, Competitive Advantage in Tourism Industry. Paper Presentation Track 3: Human Resource: Issues and Challenges (Day2) Chairperson: Dr. Inderjeet Dagar, Principal, CVS, University of Delhi The second day started with the keynote speech by Dr. G.V.R. Sastri, Chief Operating Officer at Trail Blazer India Private Limited, New Delhi, India, who spoke on Strategic Flexibility in Service Sector Technology: Integration Development of Multi-stakeholder followed by Prof. Dr. S.P. Bansal, Vice Chancellor, Maharaja Agrasen University, Himachal Pradesh who talked about Human Resource and Service Quality in Tourism and Hospitality: Issues and Challenges. “Student perspectives of Industrial Training Experience in Hospitality Industry: A Study” presented by Ms. Vidya Patwardhan & Ms Shreelatha Rao reflected that there is a need to develop more elaborate and valid structure for the training and evaluation procedures post-training along with on-site visits of the academic authorities during training. Dr. Suvidha Khanna and Shahnaz Akhtar presented paper on ‘Frontline Employee Demographics and Its Impact on Job Satisfaction and Organizational Commitment’. The empirical findings during the research showed that job satisfaction is a significant determinant of frontline employee’s organizational commitment and is effected to a great extent by their demographic profile. Dr. Surjeet Kumar & Mr. Parminder Chahal, focused on ‘Turnover in Indian Hotel Industry: A Study of Employees Opinions’ and stated monetary losses and organizational growth issues being the consequence of turnover on organization and suggested remedies to reduce turnover and increase employee retention in the hotel industry. Dr. Y. Venkata Rao and Rachel Jessie. E’s paper on ‘Affective Commitment of Employees in Hotel Industry- an Empirical Study of Puducherry Hotels’ emphasized on the affective component of job satisfaction, which is closely related to the sense of belongingness of an employee towards the organisation. Paper Presentation Track 4- Hotel Operations Management:Issues and Challenges (Day 2) Chairperson: Dr. Ashish Dahiya, Associate Professor, IHTM, Maharshi Dayanand University The paper on Hotel Loyalty by Mr. Tim Lockyer and Mr. Dr Ahmed Elebiary on Hotel Loyalty revealed that loyalty programmes have a significant impact on guest loyalty, more than staff loyalty and staff interaction, but guest satisfaction and guest affective commitment had more significant impact on guest loyalty than loyalty programmes. A study of factors moderating student’s selection of hospitality program in India by Ms. Shreelatha Rao & Ms. Vidya Patwardhan focused on student reactions examining the expectation and perception of students towards their industrial training experience by identifying the factors responsible for the overall satisfaction. Mega Events - The Impact of the Commonwealth Games on the Hotel Industry presented by Bhupesh Kumar and Dr. Tim Lockyer demonstrated that the decisions made by senior hotel management at an early stage of the planning had a large impact on the overall success of the hotels during the Games period revealing that a number of unexpected external factors influenced the success of hotels during the Games period. Paper Presentation Track 5 – Food Culture and Lifestyle (Day2) Chairperson: Dr.Manohar Sajnani, Director, Amity Institute of Travel & Tourism “Eating habits in difficult climatic conditions in Kumaon Region – Pithoragarh & Almora – Case Study” paper by Nakul Mohindra, Umesh Kushwaha and Satish Jha threw light on various medicinal plants and herbs grown, and their uses in local cuisine to make their lives healthier. Safe Food by Alok Kumar propagated the need to prevent available food from wastage & contamination along with safe food handling which has to be inculcated in the employee involved in food production & service. “Bengali cuisine and its popularity as a dining-out option” by Sandeep Chatterjee focused on the popularity of Bengali food outside Bengal and Bangladesh and find out the reasons for relatively limited popularity of this cuisine. A strong suggestion that came from the research was Government of West Bengal must take initiative in this regard by bringing in all the stake holders such as restaurant owners, chefs, hospitality and tourism professionals and educators under a common platform. The third day of the conference started with a Keynote Speech by Mr. M. D. Kapoor, Secretary General, The Federation of Hotel & Restaurant Associations of India (FHRAI) who emphasized on importance of research in academics and industry, suggesting for the need of introspection, as we are labour focused as well as a capital intensive industry and sell an intangible experience. Mr. Samir Kuckreja, President NRAI, enlightened the gathering about better opportunities and faster growth for young professionals in the restaurant industry. Panel Discussion: Challenges ahead for Hospitality Education & Hotels’ Role in addressing the issues Moderator: Dr. Tim Lockyer A Panel Discussion on “Challenges ahead for Hospitality Education & Hotels’ Role in addressing the issues” was conducted comprising of academia, industry stakeholders and industry professionals on the third day of the conference. The session was moderated by Dr. Tim Lockyer, Graduate Counselor, Department of Tourism and Hospitality Management, The University of Waikato, Hamilton, New Zealand. The panel comprised of Mr. Arulmani, General Manager, Corp. Learning & Development, Taj Hotels, Resorts & Palaces, Mr. K.V. Simon, CHA, Regional Vice President, American Hotel & Lodging Educational Institute, Mr. Nawab Dilaweez Hasan, Senior Training Manager, The Leela Palace, New Delhi, Mr. Nisheeth Srivastava, Director Studies, National Council for HMCT&AN, Mr. Deepak Behl, Director Human Resources, The Grand New Delhi, Mr. Kunal Sood, Quality & Talent Development Manager, Crowne Plaza Today Okhla New Delhi, Mr. Douglas Peter, Head - Hospitality Training at ILFS Skills Development Corporation, New Delhi and Mr. R. K. Bhandari, President IIHTTRC and Principal, BCIHMCT, New Delhi. The session commenced with a welcome note by Dr. Tim Lockyer, who reminded the audience about few findings that emerged as a cue to the thought behind organizing discussions at a common platform for sharing the ideas. Mr Bhupesh Kumar, Convener of the Conference shared the outcome of the previous Panel Discussions. Dr Tim Lockyer invited the panelist to deliberate on the expectations of students, academicians and industry stake holders. He raised some important issues to initiate the discussions highlighting the pressing need of cooperation to address these, so that ideas for a firm partnership could be shared. A few of the concerns discussed were trainees leaving the industry after their experience during the Industrial Training leading to shortage of management personnel in the Industry. The number of work hours was found to be one of the deterrents. To these issues, following were the comments from the panelists: Mr. Arulmani in context to bringing about the change in industry mentioned that progression should take place naturally, instead of being enforced. The mantra for climbing the ladder is to “enjoy what you do and enhance relationships at work place.” Mr. R.K. Bhandari pointed out that the lack of human touch, appreciation and recognition was the cause of disinterest in joining the industry. He suggested that other than HR and Training Department, the immediate supervisors also need to monitor and mentor the trainees in the Hospitality Industry. He also highlighted the fact that quality manpower is deteriorating because of variation in curriculum and programme of variety of Hospitality programme available. A standard guidelines by regulatory authorities need to be prescribed. Immediate challenge is to attract youth towards the Hospitality Programme. Continuous shortage in future may lead to war for talent acquisition. Mr. Kunal Sood added three dimensions to maintain the work -life balance: Attracting the right quality of people and retaining them; Having the right quantity of people and fuelling their growth; & Relevance of people being Industry ready or match fit. He emphasized that it is significant for the management graduates to stay and prove their mettle in the industry for the initial years to reap benefits thereafter. Mr. Nisheeth Srivastava suggested the Industry to share responsibility in building the mindset of students for joining the sector while they are at their industrial training. He also advised that Training Modules should have continuous monitoring and mentoring from the Industry. Mr. K.V. Simon advocated the youth to take charge of themselves and come out of their parental protection culture, encouraging them to have balanced aspirations and maturity towards their career. Mr. Douglas Peter talked about the unrealistic expectations of the students who wish to be hired as managers just after passing out from a hotel management college. He suggested that the curriculum and industry practices need to be sensitized for effective coaching. He also questioned the students if they could become the change for future. Mr. Nawab Dilaweez Hasan expressed that time is important for people and long working hours are affecting their personal and social lives. He said that the hotel industry personnel should pursue a hobby to combat the stress at work. Mr. Deepak Behl informed the audience that open door policy should be practiced in the industry, where instead of hotel employees approaching the HR personnel for their issues, it should also be the other way round. He urged the industry on taking care of Internal Customers in order to retain them. After the Interactive discussions following proposal was unanimously agreed upon:- 1. A relationship between education, industry and the resources is to be created with a common platform to share the views, grieves and issues. 2. To change the way education is imparted, by involving the industry in academic endeavors. 3. More CSR to be taken up by the hotels by creating space for learning experience through exchange programs. 4. Integration of all IHMs under one umbrella for uniformity amongst the strategies guiding the institutes. 5. Diversification of curriculum to be conformed to, uniformly at all colleges, to cater to different levels of employees as per the industry requirement. 6. Getting International perspective in Indian Education and Hospitality Industry, to be globally accepted. 7. The faculties should be ahead of the curve of knowledge for the institutes to play a transformatory role. It was inspirational to see the progressive and positive approach of the Industry Representatives towards Active Industry - Institution Partnership. The panel discussion provided food for thought to make the needed transformation of the Education and the Hospitality Industry. The Research workshop A Research workshop on “Innovations in Tourism & Hospitality Research Relevant: Understanding Why Academics and Practitioners Approach Research Differently” was conducted by APacCHRIE (Asia-Pacific Council on Hotel, Restaurant, and Institutional Education). Representatives from APacCHRIE were Dr. J.S. Perry Hobson, Dr. Parikshat Singh Manhas and Mr. Sameer Thapa. Conference Report Presentation and Conclusion The conference concluded with the presentation of the conference report and vote of thanks by Mr. R. K. Bhandari, Principal, BCIHMCT & President IIHTTRC 2013, highlighting the salient features of the three days conference. He emphasized that the Conference would have enlightened the participants and stake holders to get an insight into the challenges and opportunities lying ahead due to the rapid changing technology, practices and trends in the hospitality and tourism sector. He thanked all the Researchers and Presenters for their excellent cooperation and contribution to the Tourism and Hospitality field. Expressing his gratitude towards all those who participated in the Conference, he appreciated the contribution of the Banarsidas Chandiwala Sewa Smarak Trust Society Group for providing all the necessary support in the organization of the conference.
