INAUGURATION

India International Hotel Travel and Tourism Research Conference, jointly organized by BanarsidasChandiwala Institute of Hotel Management & Catering Technology and Indian Hospitality Congress was inaugurated by Mr. Anil Bhandari, Chairman, AB Smart Concepts and Former Chairman and MD, ITDC, India,Prof. Ashish Dahiya, Head - Department of Tourism & Hotel Management, Central University of Haryana, Dr. Paolo Mura, Programme Director, Postgraduate Programmes, Graduate School of Hospitality and Tourism, Taylor’s University, Malaysia and Prof. R. K. Bhandari, Principal, BCIHMCT & President, IIHTTRC on February 10, 2016 at BCIHMCT, New Delhi.
Mr. Anil Bhandari, in his opening remark stressed on the importance of research, specifically referring to the heritage and culture as a product, to offer to the tourists. He advised, “Implication of education is a must, where students should apply what they learn in order to reap benefits”.
Prof. R. K. Bhandariexpressed the importance of innovation as a driving force for the Travel and Tourism Industry. He added, “In view of the rapidly changing needs and expectations of the customers, we need to emphasize on the improvement of quality of product to ensure better level of services and customer loyalty”.
Dr. Paolo Mura gave a key note address on “The Crisis of the ‘Crisis of Representation’ – Mapping qualitative tourism research in Asia”. He highlighted the need for understanding the benefits and right usage of taking up Qualitative Research in the field of Tourism Studies. Dr. Mura closed his session with a thought provoking question, “Is it time for the new non-western research paradigms?”
A vote of thanks was given by Mr. Bhupesh Kumar, Convener IIHTTRC 2016 at the end of the inauguration ceremony.
The Conference explored overall themes related to Hotel, Travel and Tourism during the first two days of IIHTTRC through technical sessions that focused on a wide range of topics namely:- Emerging Trends in Tourism, Travel and Hospitality; Contemporary Issues in Hospitality & Tourism; Natural Disaster, Climate Change & Crisis Management in Tourism & Hospitality; Ecotourism, Green Practices & Sustaining Environment in Hospitality & Tourism; Tourism & Hospitality Economics and Forecasting; Virtual Tourism, e-Tourism, ICT and Travel Technologies; Food Safety, Quality and Innovations; Tourism & Hospitality Marketing Strategies and Consumer Behavior; Hospitality & Tourism Education and Training; Managing Human Resources in Hospitality and Tourism; Tourism & Hospitality Business Strategies and Revenue Management.
The Conference Dinner for the 6th India International Hotel, Travel & Tourism Research Conference was held on Wednesday, February 10, 2016 at The Impressions Restaurant, BCIHMCT at 7 pm.

Day 1, February 10, 2016
TECHNICAL SESSIONS
The Keynote of Mr. Steve Borgia, CMD, INDeco Leisure Hotels Pvt. Ltd gave an insight on the sustainable, responsible, rural tourism that his company has incorporated through a presentation titled “See India with New Eyes”. He stated that India is like a lotus unlimited with ample opportunities.
Technical Session I: Emerging Trends in Tourism, Travel and Hospitality
Chaired by Dr. Bharti Gupta, Assistant Professor, Department of Tourism & Travel Management, Central University of Jammu


The paper on “The Single Lady Travellers in Delhi Hotels: Practices and Challenges” authored by Sarah Hussainand Kavita Khanna discussed the practices and challenges faced by Delhi 5 Star Deluxe hotels with respect to Single Lady Travellers. The expectations from hotels with regard to a satisfied stay of single women guests were also evaluated.

The paper “Contribution of Women in Economy through Tourism” by Dr. AbrarMaqbool Shah, and Dr. Shabana Ali discussed the potential for the creation of various employment and self-employment opportunities.

Rajshree Bhargava presented paper on “Case Study on Chandigarh Tricity as a Smart Tourist Destination” which brought out how smart tourism can be nurtured in a city that has smart governance, smart energy, smart green buildings, smart mobility, smart infrastructure, smart technology, smart healthcare and finally a smart citizen.

Rahul Singh Shekhawat presented a paper on “The Impact of Enclave Tourism on the Destination”. The study recommended strategies for linking the tourism industry with the local people for tourism promotion.

“Home Swap Vacations: A Non-Commercial Hospitality: An Upcoming Travel Concept in Indian Tourism” presented by Piyush Sharma and ReshmaKambojdiscussed that although at an infant stage, home exchange vacations is soon to grow as it can save upon the hospitality and accommodation costs. The study explored the prospects and possible problems associated with it.

The paper“Contribution of Beach Shacks to the Socio-Economic Development of Goa – Case study analysis” presented by Dr. Sathish Anthony, and Helic Mario Barrettoanalyzed the contribution of shacks towards the socio- economic development of Goa and identified the stage Goan beach shacks lie, in the Destination Life Cycle.


Technical Session II: Managing Human Resources in Hospitality and Tourism
Chaired by Mr. Bhupesh Kumar, Assistant Professor, BCIHMCT &Convener, IIHTTRC


“Factors influencing Employees’ Motivation in Hospitality Industry: An Empirical Study” presented by KrishnenduHazra, ParthaPratimSengupta, and Suprabhat Banerjee, examined the factors that affect the employee’s motivation. The area of the study being all five stars hotels in Kolkata, West Bengal, which is situated in eastern part of India.

“A study on the causes and prevention of high attrition rate in hotel industry”presented by ArghaChakravorty&PriyadarshanLakhawat, discussed the causes of high rate of attrition in the hotel industry. The paper recommended ways to reduce employee turnover so as to enable the hotels to improve the overall quality of services for the guest.

YashpalNegiinhis paper titled “Paradigm ChangesIn Human Resource Management- A Study of Hospitality Industry in Uttarakhand”presented the contradictory tensions between the demand for greater customization of hospitality products and services enabled by the process of empowerment and the pressure towards standardization as well as deskilling in the delivery of hospitality products and services.

“Issues & Changes in Human Resource Management: A case study of Hospitality Industry in Uttarakhand” presented by VinodNegi, &Dinesh Kumar Karush, comprehensively covered various aspects of human resources for the operation of an effective and efficient hotel.    


Technical Session III: Destination Marketing, Strategic Management and Customer Relationship Management
Chaired by Dr. Sonia Sharma, Assistant Professor, STHSSM, IGNOU, New Delhi

“Marketing and redevelopment strategy for any disaster site: Case study of Uttarakhand flash flood 2013” presented by Chetan Shah &Vikas Guptaprojected the best marketing and redevelopment strategy for a disaster site to regain its past glory and also to evolve itself into an ‘Attraction’. They showed a road map to create an ecosystem to develop future disaster sites for both domestic and international travelers.

The paper on “e-CRM practices and their impact on Hotel Operations and Performance” by Devkant Kala &ShaileshChamolasystematically investigated the current status of e-CRM practices in hotels and the extent to which Indian hospitality managers use e-CRM practices to promote the hotel. The paper specified the impact of websites, social media and e-mail marketing campaigns on hotel operations and performance.

The paper presented on “Smart Phone Applications: Emerging Pillars in the growth and marketing of Hospitality & Tourism sectors in India” by Vikas Gupta, listed the Smartphone apps available in the market and the multifaceted roles that these apps play in the growth and marketing of hospitality & tourism industry in India. Suggestions were also given on enhancing the interface of these apps to boost their potential for the International platform.

Lokeshver Singh Jodhana and AkankshaVerma’sPaper titled “Emerging Trends of Tourism and Potential of Tourism in Jharkhand Stateemphasized on tourism potential of Jharkhand and showed recent trends of tourism that have emerged in Jharkhand. They alsofocused to unveil tourism potential in Jharkhand and the way to utilize them for states, people and nation development.

Manjula Chaudhary and Swati Sharma’s paper titled “Inbound Tourists to India: Role of India’s Image & Incredible India Campaign” described awareness of Incredible India Campaign and sources of awareness of this campaign. They also indicated awareness of such a Campaign among 53.9 per cent tourists wasthrough internet (websites),for it being a dominant source of information. It was also stated that 44.6 per cent of the tourists got information on India from friends and relatives.

“Destination Image Formation through Film Induced Tourism: A Case Study of ‘Chennai Express’ featuring Tamil Nadu”the paper presented byAamir Ali Ansari suggested that the outcome of this research may help the tourism policy makers to develop strong operational processes and structures that would allow collaborations between tourism stakeholders and film makers for mutual benefits.

Empirical Study of Virtual Tourism in Udaipur Region byOm Prakash Chauhandetermined the need, implications and rationale of virtual tourism in the present scenario through the collection of primary data from the visitors who had experienced the virtual tourism in the region. The paper gave an insight to the opportunities for people, unable to experience the destination.



Day 2, February 11, 2016

Prof. Manjula Chaudhary, Dept. of Tourism and Hotel Management, Dean, Faculty of Commerce and Management, Kurukshetra University, Haryana, gave a keynote on “Tourism and Hospitality Education in India in the frame of four pillars of learning”. The four pillars of learning that could be used for benchmarking Hospitality Education are: Learning to know, Learning to do, Learning to live together and Learning to be. 

Technical Session IV: Learning, Teaching and Assessment in Hospitality Education

Chaired by Dr. Paolo Mura, Programme Director, Postgraduate Programmes, Graduate School of Hospitality and Tourism, Taylor’s University, Malaysia

ParvadhavardhiniGopalakrishnan, Anjira Mehta & H.G. Joshi’s paper, titled “Student’s perception and expectation of hospitality educational curriculum: A case study of undergraduates of Hospitality Management at WGSHA Manipal University”  emphasized that periodic interventions to the curriculum are important to enhance the generic skills with specific inputs related to emotional intelligence, in order to meet the student expectations.

Parminder Singh Dhillon’s paper titledDeterminants of Dissatisfaction among Hotel Management Graduates of Punjab enlisted few measures for hotel industry to curtail staff turnover. These included better pay packages for hotel management trainees and new entrants in the industry.

ParthoPratim Seal’s paper titled “Teaching, training, tools and techniques: Impact on aspiring chefs”stated thatthe chefs have to be trained at various stages so that their learning outcomes are being met. It was also put forth that there is a lacuna between what industry wants and what the college delivers.

Chef Prasenjit Sarkar & Chef Thirugnanasambhantham’s papertitled “Relationship between Self, Peer and Faculty Assessment of Technical Skills in Indian Contemporary Cuisine Practical: A study on culinary students”aims to compare assessment of Indian Contemporary Cuisine Practical of Culinary Art students amongst themselves, with their peers and with their faculty.

“A Study on Hospitality and Tourism –with special reference to Education and Training” by AnujAbrol&Tarun Tiwari’s paper projected the growth and development ofhospitality and tourism industry. It also aimed atstudying the training programmeas well as its implications on development in hotel & tourism industry.

Technical Session V: Food Safety, Quality and Innovations
Chaired by Prof. Ashish Dahiya, Head - Department of Tourism & Hotel Management, Central University of Haryana

Krishna Kumar and Mohit Kumar’s paper titled “Food Safety and Quality in Mid Segment Hotels in Kumaon Region of Uttarakhand” affirmed that objective of their study was to assess food safety and food quality practices and associated factors among food handlers working in mid segment hotels in Kumaon region of Uttarakhand.

S.Kaliappan and VasanthanSigamany’s paper titled “Impact of living away from family on the eating habits of young adolescents in a University Town” discussedthat eating habits of young adolescents are inculcated by parents and members of the family right through childhood & different food habits are inculcated during their elementary, primary and secondary education.

Jatashankar R. Tewari’s paper titledLocal Food and Beverage in Tourism: The Cuisine of Lucknow”  described thatlocal food is  an additional unique feature of the destination and modern day travelers are seeking more from destination to complement their experience and making their trip more pleasurable.

S. P.  Rath,Vimal Shuklaand SiddharthRath’s paper titled “Dichotomous Controversy of Junk and Organic Food Consumption in Indian Life Style”informed thatjunk and organic food consumption is not a choice of the modern life, rather a perception of controversy with sound and scientific validations.

Saurabh Sharma’sPaper titled “Food Safety, Quality and Supervisionhighlighted the lack of coordination in the development, interpretation and enforcement of food safety standards had weakened regulatory oversight and created systemic vulnerabilities.

The paper byAnoop Kumar titled“Analysis of Service Quality Offered by Private Catering Undertakings Located on Highways: A Study of National Highway No 1”identified the attributes of service quality that influence customers’ perception while using the services of private catering undertakings located on Highways.  It also studied the impact of service quality attributes on overall perceived service quality.

The research work ofVikas Kumaron“Mcdonaldization Model and Augmentation of Indian Food Market Share”explored the extent and magnitude to which the share of Indian food can be augmented by using McDonaldization model, as fast-food’s dethroning the traditional food culture and the swelling of its market share has emerged as a matter of great anxiety for many of the popular gastronomies of the world.

Technical Session VI: Ecotourism Planning and Policy Development
Chaired by Dr. Kumar Ashutosh, Teacher-In-Charge, Department of Tourism, College of Vocational Studies, University of Delhi, New Delhi

PriyaBhalla and Prodyut Bhattacharya’spaper titledWater predicament at mountain eco tourism destination: The Binsar Wildlife Sanctuary casediscussed inevitable impact of tourism on the natural water resource of the mountain destination, situated in the middle Indian Himalayan Region.

ParulMathur and BhavyaKhamesra’spaper titled “A study on Awareness of Tourists about the Eco friendly Practices Implemented by the Hotels in Udaipur Regionemphasized that tourist should be made aware of the small and the big steps taken by hotels for the overall success of the environment management programme.

Vivek Sharma,inhis research paper on“Vulnerability and Impact Assessment of Climate Change on Tourism Destinations”analyzed that the destinations have to work hard to reposition themselves as ‘green’ to try and capture a growing share of the market, that is seeking travel options, in harmony with the environment.

“Nalanda Land of History” presented by VandanaGoyalinformed the audience about the rich history of Nalanda through incorporation of numerous pictures.
Piyush Sharma &TahoorTabaan’s paper titled“Prospects of Sustainable Tourism in Kashmir Valley: A Case Study of Gulmarg Region”aimed at offering tourism sustainability at fragile geographic area like Kashmir Valley which is subjected to a lot of political as well as environmental exploitation.

Technical Session VII: Managing Sustainability in Hospitality and Tourism Industry

Chaired by Mr. ArghaCharavorty, Principal, Institute of Hotel Management & Catering Technology, Gurdaspur, Punjab
“An empirical study on impacts of tourism in reference to economic, environmental, sociocultural and political issues”a paper presented byPradyuman Singh Rathore explored the implications of tourism on environment and emphasized that the practices are reflecting on positive & negative issues to be taken seriously.

Arian DokhtFarnad Pour andSalma Ahmad’spaper titled“The role of ICT in order to disseminate information about the potential of entrepreneurship and earn income for local people in tourism industry (Case study Mussoorie, India)”indicated that information technology plays a vital role in sustainable tourism and improving of education in the tourism area. It was also mentioned that the managers and docents must be trained to improve living conditions and boost the tourism industry.

Parikshat Singh Manhas andRamjit’s study of“A Paradigm Shift – From Service to Experience Economy - The Case of the Hospitality and Tourism Industry”explored and clarified the essence and characteristics of the hospitality experience, drawing attention to the importance of experience in the hospitality industry. Moreover, the outcome of the research revealed useful insights from previous researches and offered a potential agenda for curriculum development and future research that can enrich hospitality theory and practice.

“Rural Tourism Marketing in context to Indian Tourism Industry” a study presented by Kuldeep Singh &ArnabGantaitrevealed the practices in promoting Rural Tourism in India in order for Tourism acceleration and highlighted the challenges faced in rural scenario.
GoldiPuri’s paper “Current Trends and Importance of Technology in Hospitality Operations: An Introduction”was a formative study that enlightened the delegates on the increasing usage of technology in day to day Hospitality Operations.
Ms. Anjira Mehta, a final year student of WGSHA, Manipal, received Best Paper Presenter Award.

Day 3, February 12, 2016
The Keynote of Mr. Ramesh Takulia, Consultant, NCHMCT, Ministry of Tourism & Former Director, L & D, Taj Hotels, Resorts and Palaceshighlighted Hospitality Education in context of Adult Education, which has been reshaped and repackaged time and again since last six decades serving its purpose. He emphasized on encouraging entrepreneurship at the college level along with giving leadership training instead of focusing only on operational skills. The hospitality curriculum needs inputs from Business Schools to groom the managers for today.
PANEL DISCUSSION
A Panel Discussion on “Global Hospitality Education vis-a-vis Indian Hospitality Education” took place on February 12, 2016 comprising of panelists namely: Mr. Ramesh Takulia, Consultant, NCHMCT, Ministry of Tourism & Former Director, L & D, Taj Hotels, Resorts and Palaces; Dr. Sudhir Andrews, Executive Director, Skill Maker Training Services, Dubai, UAE.; Prof. Y. G. Tharakan, Dean, Le Cordon Bleu School of Hospitality, G.D. Goenka University; Mr. Anthony Page, General Manager, JW Marriott, New Delhi; Mr. Deepak Behl, HR Director, The Grand, New Delhi; Dr. Paulo Mura, Programme Director, Postgraduate Programmes, Graduate School of Hospitality and Tourism, Taylor’s University, Malaysia and Prof. R.K. Bhandari, Principal, BCIHMCT, New Delhi. It was unanimously agreed that a Change in Indian hospitality education is needed through incorporation of new technology as well as restructuring and benchmarking of curriculum. Also, the role of a teacher has to change to a facilitator and students need to be treated as adults who must show curiosity and passion towards learning. Emphasis on the development of entrepreneurial skills through reflective assignments and interdisciplinary projects ought to be a key feature of hospitality programmes.  
The highlight of the conference was the Indian Hospitality Congress Awards. The awards felicitated by Prof. Ashish Dahiya, Head - Department of Tourism & Hotel Management, Central University of Haryana, included:

The concluding vote of thanks was given by Mr. Bhupesh Kumar, Convener and Dr. Ashish Dahiya, Co-Convener IIHTTRC 2016 who acknowledgedthe efforts of all the Researchers and Presenters for their excellent cooperation and contribution to the Tourism and Hospitality field.

The Three day conference culminated in a Culture Trip to “Surajkund International Crafts Mela”, Faridabad, Haryana organized for all the participants and delegates.
